So I just updated my phone to 3.0.1 and my 3.0 SDK doesn’t work anymore. So I installed the Beta 3.1 - and it doesn’t work…
Anyone else had any problems?
Read the “Advisory” on the Apple page with the download link. They have you make a symbolic link from the 3.0 SDK to simulate a 3.0.1 SDK.
The 3.0.1 issue was discussed here:

3.1 is incompatible with development though, and you’ll need to revert.
Keep in mind to the Advisory posted by Apple, (and this is mentioned in the link above), when you copy/paste the console line, make sure you avoid adding the extra empty space.
Thanks guys. I completely miss the post about this and it was late. Reading an advisory from Apple was the last thing I was gonna do 
I would have got a hammer and hit things first.
