Had the same problem. Remap and Subtract nodes didn’t help. Eventually if i got it right this happens because of the “Precision” of texture’s color. If you want your texture to be inverted correctly you need to use images with higher pixel depth. The higher it will be the more precise result you get.
So to fix this you can set property’s precision to float
And maybe manually set your desired format in texture’s import settings.
Also you might try to uncheck “sRGB (Color Texture)” in import settings as well for a grayscale image
