Addressable Assets / Loading strategies

Let's use this thread to discuss all things Addressables!

Note: we probably won’t need to load EVERYTHING as Addressables, just scenes for now. So don’t switch Prefab and SO references to AssetReferences just yet.

We also might need to modify the script to load scenes in the editor… or maybe not? If not, we need to keep a double reference in the ScriptableObject.
