App Tracking Transparency not showing after reinstalling app?

I’m trying to test the App Tracking Transparency pop-up is correct, but I have only seen it once.
I have tried deleting & reinstalling the app, reset tracking & privacy in settings, included ATT framework in Xcode along with NSUserTrackingUsageDescription in the Info.plist.
Does anyone know how to reset the device ATT?
iPhone 12 iOS 14.7.1 (physical device)
Unity 2020.3.8
Xcode 12.5.1
