The tag stats at https://games-stats.com/ show that games with the “farming” tag have a median (not average) revenue of $18,000, far above most other tags, despite the large number of games with this tag and the likewise large number of amateurish ones. This seems phenomenally good in terms of the odds of success with this genre, or am I misinterpreting?.
If you sort by the median revenue there are lots of tags with both higher median revenue and more games (so less likely for it to be a scarcity effect).
I’m not sure what you mean (maybe because I’m so tired). I was surprised to find that there are only 69 games listed for “farming” (I hadn’t noticed that before). Not sure if that’s good or bad for the odds of making decent revenue: not as much competition but maybe the median is misleading? I was also surprised to see that “turn-based” has a median of $20,000 despite over 1,700 games.
Mainly saying that if it’s based on scarcity, the revenue number might go down as the total number of games goes up. While, as you mentioned, Turn-based is higher revenue with a much higher number of games, so it might be expected to stay that high.
Something else to consider is how difficult or easy these things are, what kind of content they’re expected to include sort-of-in-addition-to the tag (I’ve played My Time At Portia and it’s a farming game that has a sort of open world with combat and a town with various quests for different characters).
Your last streak of questions implies that you may be trying to pick a sure–fire winning title through statistical tag and revenue analysis. Which might not be a good idea, as you may end up latching at the wrong thing instead of the one people want.
The thing is “farming” is a fairly common element, and on top of that there are several different archetypes as demonstrated in the tag analysis.
On the gamestat pages there are following archetypes:

Basically there are even porn games in there.
#1 spots are Farming Sim and Doraemon farming game with esimated revenue of $970000. Likely due to being high budget. However, tenth position is already $160000. And that’s an estimation.
