How do you think about this sort of game? Can survive with only game system and level design?

Sounds like a niche market that needs filling. I’d say if it’s something that you’re interested in creating, then go for it! There are plenty of old-school gamers who’d be interested in that sort of thing… if it’s good.
I agree, if done well I could definitely see myself playing a text-only game on my tablet.
Typing is not fun on mobile devices, so you would have to interact with the game using buttons, primarily. I think that it could be fun, as long as the text is readable. Some illustrations would also go a long way toward appealing to the mass market.
Be careful, there is no market there for a reason.
Do not make your decisions based on some few answers here like :"There are plenty of old-school gamers who’d be interested in that sort of thing… if it’s good. “, “Why not, it’s an undiscovered country”, " Long forgotten niche” etc. Before investing your time and money.
The only reason those game existed is because they were completely free and the computers were primitive.
As the technology evolved people moved on to better quality product.
Not to mention the new game play capabilities which were not possible in MUD games.
So, my advice is to do a proper research on this matter if you are planning to make any money on that.
I think the last such game was made in 1998.
This fellow has a few games that are a mix of text based/still image/choose your adventure that I first ran into on Win Phone 7 store though it was ported (or ported from) Android. Seems to get very good ratings by those who are interested in this genre:
But we can still see that guy uses some art too.
While a true MUD has no art or sound, as the OP requested.
Still OP it is always good to do a detailed research before jumping into it.
Perhaps you could do an alternative. Instead of doing a pure MUD include some art too?
