I am an experienced software developer but I am very new to Unity and know nothing about 3d modeling.

I would like a greek trireme 3d model with a rowing animation.

Something like this would work. 3DVIA - 3D Home Design Software | Dassault Systèmes

Care about performance over resolution, i intend this to run on mobile.

Have the sail be a separate piece, that I could easily recolor to make enemy and player ships.

I am willing to pay for this. Please reply with an estimate.

Try turbosquid.com, they definitely have triremes at various prices, some with animation. Or alternatively contact Arteria3D.com as he will do commissions.
