But so can everyone else, so it may not be as profitable as you think.
The issue is if you “make the assets your own.” Do you just take them in and throw them wherever, mismatching everywhere? Or do you pick and choose to get a cohesive style? And do you change them to make them different from the original? It also depends on how often said assets have been used, and if they are easily recognized. If a bunch of games are already using them, you will have people either think you stole it from some other game, or just say “oh great, another Unity game…”
In general, direct sensory assets, like sound, music, textures, and models, are best used scarcely if not heavily modified. If you modify them, and it is enough, then you can get away with more, but if not, you should combine it with your own stuff, with the best option being just avoiding them altogether. I also recognize how difficult this is, especially with no help and not knowing how to do the things yourself.
Another option is to find something you CAN do. For example, I like 2d games, pixel art too, but I have never gotten good at making even “acceptable” pixel art graphics. On the other hand, I can make “acceptable” 3d graphics, so what do I do? Make 3d pre-rendered sprites. It isn’t as good as other methods, but it is something I can do “acceptable” without outside help. Others rely on vector art, or pixel art, or hand drawn stuff, or a number of other things. Can you do any of those things?
To carry on from @kburkhart84 , will your game look noticably different in screenshots to other games out there that use those assets? Will a consumer understand that your game took effort or will they think you have simply sold an asset flip as a cash grab?
This is something that needs to be considered heavily whenever using free assets that are widely available and widely used.
Do note this is mainly about visual or auditory assets; scripting assets, editor extensions, go nuts

Assets are meant to speed up your project development so yes, use them as you want as long as you comply with the Asset Store EULA.
