Maybe someone can help me on this
There are a bunch of assets in the store, all the scripts and extensions…many look like they do the same thing (like I see 4-5 terrain making assets)
I’m just not sure what are the best to use to make the Unity engine more…complete.
I see a bunch of scripts for AI, but there are so many…that I get lost with it, and then you have the assets that seem the, don’t list all the features, and are priced differently
Yeah, makes my brain hurt by looking at them, and not knowing where to start
There are lots of ways to approach this. First thing that comes to mind would be to start off slow and try to focus on one thing at a time.
-Most assets will require you to edit them to suit your needs in some form or another. This will be as easy as adjusting a few things in the inspector to editing the code itself. So find out what you’ll need to do to make it work for your project.
-Few places to cover before making any purchase:
Asset store page (of course)
Any links to documents or wiki’s etc
Author’s website (to see what else they have made[portfolio])
Webplayer’s are very helpful
Most people that release assets also make an announcement here on the forums, and I would highly recommend reading them from start to finish. People ask questions, devs give feedback, you can really see a lot of assets evolve as they progress to make changes improving their stuff.
Youtube videos of the asset
Speaking of youtube, try using a tutorial to make what you need yourself. I think that this will get you the best results for most things, because you’re going to most likely edit the bought asset anyways.

Yeah…those aren’t so helpful when the asset doesn’t have them
then dont buy them and ask the author to provide the information you need.

You know, like what assets other teams bought…or something
It sounds like you want to buy whatever is popular, but maybe you should instead focus on what your specific project needs and then research and narrow your options down.
Not even looking at the asset store I can tell you off hand that terrain composer is the most popular terrain editing asset, and for AI that would be the node based AI.
Are these assets going to be what is best for your project? No one can answer that question but you.
I’m not an expert but this is what I’d do to choose between similar scripts and extensions:

Check is the source code included or it’s all packed in DLL’s. Prefer assets that come with source code. If one day Unity change its API you may be able to easily fix the code and make it work even if the support is not available anymore.

Compare the ratings and reviews. Ignore the reviews starting with “I just bought this…” an pay attention on those with “After using this for some time…”. These can tell is the asset really worth using in long run rather than after the initial impressions.

Check the support page. See is the author still supporting the product or not. Avoid unsupported assets.

Check the support page. Compare the number of users’ complains to number of appreciation posts. Check how many and how often bugs are reported and how many of them and how quickly they have been addressed.

Check the support page. See how often people are asking for help on how to use the asset. This may give you better understanding on how easy to use that asset is. But keep in mind the number of features too.

Finally compare the prices and see what fits to your pocket 
So, in the end, it comes down to what…say the sound artist of the team would find most useful, ect
