I’m presently using 10.6.x on my iMac so if I update my iPod touch from 5.x to the latest iOS, will I still be able to develop for with Unity or will the iOS update mean I have to update xCode and then I have to update to Lion or Mountain Lion as a consequence?
Please note I haven’t done any iOS apps for a little while and don’t even know if its still possible on Snow Leopard. I’m just looking to avoid that “Oh no I have to upgrade all my software!” trap.
You will need to go to lion not moutain lion to get the latest xcode updates.
I am not sure if your submission to the appstore will be accepted if it isn’t compiled for iOS 6 so I am not sure you will be able to publish on your current setup. Hopefully someone will confirm that, but that is the impression i was under.

Yep it will run Lion, My biggest worry is breaking all my other software. I have a legit license for Motionbuilder 7.5 and if I was to cause that to stop working…Would be cheaper to buy another Mac rather than upgrade. Might have to something like that when it comes to publishing though. I’ve been doing mostly art for desktop games for the last year and a half.
