Can you pose a rigged/skinned character in-game?

This is probably a super basic “duh” question but its one I’ve been trying to find the answer to for a while (I am an environment artist with zero experience with rigging or animating!). I don’t really know enough terminology to even know how to efficiently search for this info.

Lets say I have a rigged character of a low-poly creature. Can posing this character be part of a game? Can you grab joints or bones in-game and manipulate them? Can I assign UI elements to bones so they can be moved around?

I have the feeling that the answer is “no” and that animations are essentially “baked” when the game compiles. If that is the case, what would be the best way to go about this idea. Blend shapes perhaps? Blend shapes that are attached to UI elements?

You might want to review rag doll as well, BUT if I were you I would forgoe all extra research, go watch some of the finalIK marketing material, then purchase it and dig into the inner workings of that awesome plug-in.
It does what you want pretty much out of the box. But UI linked motion will still need to be created for your needs.
