Can someone tell me where I change the project name that appears on the upper left hand corner of the windowed version of the build?
Just rename the main folder (which contains the folder Library, Assets, etc).

I’m out at the moment and can’t double check, but if memory serves, you can change that in Player Settings (edit->settings->player).
