I have been following Sebation Lagues tutorial for height maps and mesh generation and im trying to find a way to create Islands rather than one big mesh.

Can’t you just multiply them?

It’s multiply, like Rad Red said above.
But you want to have the island be white island on black… the pics you show have black island gradients.
With white island on black water, that way when you multiply a perlin noise source by this, it will bring down the water, and allow the island to be high and lumpy and interesting.
You can also multiply one perlin by another (different area, frequency) perlin to get very interesting stuff.
