Is there a way to create dedicated server clients etc for use with Unity games, like one of the networking examples for instance?

No, there isn’t

On OSX you theoretically could use the batchmode functionality. theoretically because I haven’t been able to get it to run and even if, the overhead of unity on a plain network server is kind of desastrous (you still need a lot of power and are capped to 80 - 100 players at max on a server for most cases)
