The provided DemoScene in XRI 3.0.3 seems to still require the Affordance System which is stated to be deprecated as of 3.0.0.
How can I get this Scene to work, or what am I doing wrong here?

Did you delete the affordance system? You do still need it until we ship its replacement.
The reason it was deprecated is because we have tight rules around deprecation at unity, and can only do so in major versions.
The affordance system use only provides warnings in 3.x, then in 4.x it’ll be marked as obsolete and then removed in 5.x.

Thanks for the clarification. I deemed it unnecessary because of the deprecated label.
Why it was missing though I cannot say. A fresh package install fixed it.
