Do I really need to worry about having too many large textures?

Money budget, or content budget?
Money - Depends what you’re wanting to do. Little for fun games don’t have to cost you anything. But if you’re going to be wanting to do it at a higher level, the cost rises considerably, and a lot quicker and higher than many want to believe.
Content wise, depends on the players you’re aiming for. If you’re making a casual game, aim lower because your target users will generally not have the best hardware. If you’re aiming for hardcore players, you can relax the specs somewhat. Though in all cases, it’s best to plan for the worst system. In most cases Unity will look after a lot of that, but you still need to go through things with a fine tooth comb, test on different setups etc.
