Lately in Unity, when I compile a build for PC and Mac, it makes the screen bigger and it makes my games unplayable.

I was under the impression you will talk about file sizes, and we would have someone post explanation of compression for the nth time.
But this is new. Could you elaborate?
Have you checked the resolution in Player settings (Edit → Project Settings → Player)?
I’ve been having this exact same problem. For some reason, forcing the default resolution in the player settings doesn’t seem to work anymore, so on first load I use Screen.SetResolution to force into a 720p window. It’s annoying, but it’s the easiest solution I could think of at the time.
Isn’t there a prompt, when you run the application, that asks you which resolution and quality you would prefer?
I disable that prompt because it looks tacky as all hell. I imagine OP has done the same.
