Which shaders are you using? Is it the same shader in both cases?
For Iphone i used the shader Mobile/Diffuse Detail , For Mac i used Bumped Specular…

Well, if you need Bumped Specular, you should use Bumped Specular.
However, be aware that our stock Bumped Specular will not be the king of performance on a mobile device. But, Unity 3.2 (soon) will have an optimized approximate version of Bumped Specular that will be much more suited to mobiles.
Also… do you really have a normalmap on that model? Hard to say without knowing, but it does not look very “bumpy”. Do you really need a bumpmapped shader?

p.s: this is my first game with unity , and the second with Iphone. The first game was made with Gamesalad and it is totally different from 3D
