I don’t believe the car’s angle is being effected directly. The physics engine is applying forces upon the car through friction, collision, torque, drag, … uhhhh… etc.
If you just wanna know the relation of angle change to speed of turn, I’m sure you can hack together a script that will plot a graph in real-time of the angle’s change over the last frame. You’d then be able to see how the angle is effected by speed of turn and whatever else.
