Any special tools used?
I use iShowU HD. Works pretty good.
I use Screenflow (Video Editing and Screen Recording Software | ScreenFlow) to record the simulator. It’s pretty great.
I’ve also recorded off the device using a complicated method of adding TVOutManager (http://touchcentric.com/blog/archives/123), plugging in a video output cable, and plugging into my Dell’s video input jack, and recording the video on the Dell using the crappy software that came with it. It’s ridiculously complicated but for one AR game I do have to record off the device.

Unfortunately I am not aware of a tool that let’s you record what is on the device outside of using a video camera or something like that.

@EricJ im using also iShowU HD. But after editing the video in iMovie and uploading on youtube the quality isnt good

I’m using iShowU HD as well. However, there are definitely quality issues that I haven’t totally worked around yet. The Apple Intermediate Codec that comes out, as well as pure Quicktime encodes seem to come out well, but uploading 480x320 Quicktime to Youtube definitely seems to produce subpar artifacts. Is anyone using any special tricks (such as recording in the editor at higher-than-device-resolution) to get around this?
i ported the game to the pc and used fraps. my mac mini was to slow to record the ipad resolution.
also great to take screenshots with anti-alias if you ever need high resolution artwork for anything.
I’ve used Screenium to record my game playing in the editor, though the free version will only record 30 second clips. I’m about to buy it unless anyone has a free alternative?
Thanks - does this record the audio output as well, or does it limit you to mic input?
I believe you can pick the audio source though I have only used the mic and could be wrong on that one (I believe the beta version has better options). Either way it’s free so you can experiment and making a video is REALLY easy, only took me 2 minutes to do my first one (including the time to figure out how to use the software).
i also use screenflow, it might me more expensive than other, but i tried about 4 or 5 different solutions, found screenflow to be the best.

I record my Simulator using Quicktime x that comes with Snow Leopard. It’s free. I then clip/frame the recording.
How about CamStudio?
