I have sold a few copies of my asset and at the moment my Transaction History has a $24.43 payout in “Status: In Progress”. It has been like this for 4 or 5 days. I have set Paypal up so wouldn’t think it would take very long to appear in my account.
Is there anything else I have to do or is it just a waiting game from here?
(I’m just another publisher, not a Unity employee, so don’t take this as the definitive answer.) Payout to PayPal is on the 15th of the following month and should happen within a day as long as you’ve fully set up your payout information and tax info correctly on the Asset Store’s publisher dashboard. (Payouts Setup Guide.) Make sure your payout profile says “validated” for Payout Method and Payout Tax Info; otherwise payout won’t happen.
If that all looks OK, maybe there’s an issue on the PayPal side.

Are you an Asset Store publisher? Are you waiting for payment from the Asset Store? If so, the Asset Store team probably doesn’t see this thread. Email support directly, or at the very least post in the Asset Store publishers discussion section, not here. (Note: I cannot help you further. I don’t work for Unity.)
After registering as a Publisher, you received an email invitation to the closed section of Discussion for Asset Store Publishers. Here you can find information about sales, experiences, and so on.
