Is there a way to stop Unity Hub from automatically updating? It kept saying it’ll update the next time I open it and there is no way to prevent this? I want to disable this feature.

When you close the Hub, just do not allow it to “make changes” to your system. You get the UAC prompt for the install procedure upon exiting.
Regardless of that, there’s no harm in installing those Hub updates. It’s also commonplace behaviour for connected apps and all security related tools (browsers, antivirus, OS security updates).

I missed that I could have prevented the update. Pretty sure it was just a header that read “Hub will update on next restart etc”. I’m on Mac - maybe I just need to get my eyesight checked
The Hub isn’t an essential neckbreaking thing that you cannot roll back yourself (installers are available from the archive). Same goes for patch-level updates. Users reporting issues with lower-digit patch levels often have these fixed just by installing the latest patch.
The way I do it is to keep updating to every new patch level but keep the -1 patch version around for some time. If anything goes haywire I typically notice that within a day or two and can quickly roll back.
While some known issues that one surely could endure, but having them fixed over time makes things less annoying and is comforting.
