Can the above be developed by unity ?

Is it possible to deploy actual 3D projectors like shown in the video.

There is no such thing as a 3D projector. Those are ordinary 2D projectors (with the models & camera angles carefully set up to look correct from the point of view of someone sitting in front of each plate).

Yes, you could do that in Unity. You just need a team of really good modelers/animators, and a big budget.

I have a team of modelers and artist and a couple of developers also but how should i do this with unity, is it like a rendered video playing , how are they detecting plates and objects for the show or is it pre calibrated

There’s no need to realize it as a real-time experience, unless the customers should interact with the CGI characters, so it could be done with a pre-rendered video like any other video mapping experience (that is, the typical public video projections on large building walls). So, you could use any modeling/animation/rendering software to realize it, or even using Unity in an offline render modality.

As JoeStrout already pointed up, it’s all a matter of setting up the cameras and models to have them aligned with the real, pre-measured and fixed objects - the table, dishes,… - and to have them looking correctly from the customers’ point of view (again, like any other video mapping show).
