Why can’t I find this? I tried the Scripting Reference, tried Google… this API should be easy to find. What am I doing wrong?
Type “iPhone” into the search box in the scripting reference.

He meant: Open the script reference and search for iPhone there.
thats where you will find the iphone related scripting commands
Thats what you can access from the iphone from within unity (accelerometer and touches)
You searching in the Unity Iphone docs? or just the Unity docs?
They are separate Apps with separate docs.
