I have noticed that most packages are com.[package name], is there any downside in just dropping the com from the package name?
It’s reverse domain name notation. You’re meant to identify packages based on your primary registered domain name or at least a domain name that’s recognizable. Not adhering to this pattern will confuse some users expecting this.

Is it a problem I don’t own any of the domains and I’m unlikely going to own them in the future?
It doesn’t matter, you can use any string, and you do not have to own the domain.
I use “com.codesmile.xyz” for my packages and have not bothered to even check if it’s available (it’s not).
