For example, does Muse use Stable Diffusion under the hood? Is there a dataset that you use like LAION-400-million open dataset?

Hello!

While I am sure an Unity Dev would be able to provide more information on matter, according to the Unity AI FAQ page, they make use of a custom-built internal model, trained on data and images that Unity owns or has licensed, instead of an already existing dataset.
