After importing a palette and assigning it to a material, I noticed that changes made to the material happen to every color. I created the map in Magicavoxel and made specific colours glow, be transparent(glass-like), others metallic etc. Is there a way to apply the changes to only some colours and not the entire palette?

Unfortunately no, you will need the seperate materials since the palette, in this case, is working as a texture!
What about adding another material to the same object, is that possible?
