Lightbaker baking huge pixels and glitchy maps

Hi there!
I have been playing around with light baking for a while now, but I can’t seem to figure this one out…
Seemingly regardless of what UV Map I provide or what Baking-Settings I choose, always get the same weird result:

Some areas seem to bake perfectly fine, but in others I get huge pixels and random dark/bright spots.
I have also attached a screenshot of my UV Map below.

For anyone interested - I fixed the issue by enabling “double sided global illumination” in the material properties.
