I’m a designer looking to learn how to create great UI in Unity.
Looking for a basic/intermediate level online course to take me through all of the controllers, prefabs, animations etc.

Good idea, but ui toolkit is still in preview state, which means dont use it in production or use it with caution.
Then you have 2 types of design 3d and 2d and conceptual ui design. If you interested i can forward you to great site where you get ideas about ui. In general you can find good courses on learning unity site.
Best advise ever , before opening unity editor or even photoshop, draw on paper your ui…
