I've successfully gotten networking working smoothly with Smartfox Server, and now I want to start optimizing the network traffic. However, I don't know how to get the number of bytes sent in each update. I'm sending updates as small text strings.

Just use Wireshark - it's probably the most accurate measurement you can get.
