So… I created a scene, baked my lighting and built it out… then I was surprised that I was in the matrix… (see image). Tried to re-bake as you see it in the image… but it did not change the outcome. I was still stuck in the matrix… Any suggestions would be helpful.

Unity is limited to 4GB of assets. If you try to do a build with more than that, your assets will get corrupted.
So… I changed all of my textures back to 2048 and re-built the exe. It fixed it. No more dodging bullets in slow motion. Where would we find the information about how much space is being used up by my assets?
