One of my recent asset store submission is in pending review state since december 5th. Is this a normal time range before review or is there something going wrong with my submission?

Waiting more than 30 days is quite common recently, unfortunately.
If you want to be sure though, you can contact support (by submitting a request) and ask for more information:
Their support normally responds within 10 days.

As Peter77 said, the team are experiencing a bit of a backlog right now so I do apologise. Providing the asset is set as ‘pending’ in your dashboard, it will be seen to! So do not worry about it being ignored unless it is set to another status

Is there a place to check out the average reviewing delay at any point of the year? (If not, would be very usefull)
The two holidays since December 5th are probably contributing factors, considering it is commonplace for people in the software industry to take extended vacations in the later half of December. I was practically the only one at my company’s office between Xmas and New Years.
