The build settings for Windows and MacOSX are the same, so you shouldn’t need to set anything yourself to get good performance on the Mac. However, you haven’t given much information about the specs of the computers you are using or about what is happening in the scene. For example, some Macs have relatively slow onboard GPUs that will show a big difference with some scenes.
Unfortunately OpenGL on OSX is much slower than DirectX on Windows, so you will almost always get a higher frame rate on Windows for otherwise similar hardware.
Even if you think your scene is simple, you may have an excessive number of draw calls or a very high poly count. So check the statistics in the Game view in the editor.
Unsure if OpenGL is slower … I was always under the impression that Apples unbeatable capability to trash drivers on a level competing with ATI was the reason for it.
They should hire NVIDIA engineers to write them drivers that for once work and not touch them till Lion
