Do I really need to muck around in Xcode (as per Apple’s instructions), or does Unity take care of this stuff?

You need to much around - yes.
And unless you have used 3.0 features, I would definitely compile against 2.2.1 to also be able to sell to the iPod users who didnt want to pay for the update

Dealing with Xcode is kind of a pain in the butt, IMO. I’m pretty sure I’ve already screwed something up…
Would you choose something older, like 2.1? What does Unity require?
Unity requires 2.0 to run basically.
But on OSX 10.6, 2.2.1 is the bottom end you basically have with the new XCode.
