What are the rules for buying assets from the asset store to use in your education, can a school buy one copy and let all the students in a class use it?
If not, is there a discount for buying a complete classroom set?

If it is an editor extension you will need to buy a copy for each machine it will be used on, for other assets you only need to buy one. If you need to buy multiple licenses probably best to contact the developer directly and see if they can do an educational reduction, though they are a bit limited as it is against asset store rules to sell the asset cheaper outside the asset store but you never know.
That may not be true. It’s best to contact unity asset store and or education departments directly. Schools may be different from a company, as there may be an increased risk of use outside class in non-class projects. It wouldn’t be right, I think, for a school to distribute an art asset to 180 students who then feel they “own” the rights to it.
Suggest using vanilla unity for learning/teaching purposes - unless its an asset that can aid in teaching the fundamentals of development.
Off the top of my head I dont know of any that would be suited to teaching development practices.
