Is it somehow possible to show the latest topics without the pinned ones?
Everytime I click on Unity Discussions I have to scroll for 2 pages to skip the pinned ones.
Nope, but you can unpin topics. Just click the little pin button.
Unlike most traditional forum software, pins here are (kinda) user-side. Unity creates new topics and auto-pins them, but you can elect to just opt out of the pins.
