When I bake a lightmap, dark ‘splodges’ appear randomly on some surfaces.

I think this issue was fixed in 3.2. Wait and check
When will 3.2 be available?

Seriously though, soon (while we don’t have firm date we are close)
As you say ‘soon’ is never close enough!!
Could you suggest how I might deal with the problem in the meantime?
