Looks like the canvas/sprites are scaling or incorrectly fitting the screen aspect, the blue is likely the camera clear color.
Try setting your GameView to have the same aspect and/or resolution and see if it does the same in the editor.

Thanks a lot! You fixed problem #1. Next problem is that my editor keeps resetting when I close it. It restarts to a blank editor with all my assets in the assets place, but not loaded into the hierarchy or game.
At this point it’s not a problem. I just do some simple reassigning and realigning, but I can see this problem causing me great pain in the future if this problem remains unresolved.

It reloads everything when I exit and then start up Unity again. It is no problem right now. I can just reload my assets into my hierarchy and then realign everything in the scene window. However, I can see it causing me great pain in the future when I work on more complicated games if this issue remains unresolved…
What? Are you saving a scene? You need to save the assets as a scene.
