Super-quick question!

To get my build from my mac onto my iPhone for testing, do I need to jump through a bunch of iTunes Connect hoops? Or is there a faster way?

I’ve tried the Unity remote thing, not bad for playing around with input but not great overall.

You need to have a developer account, prepare your Mac with certificate and profiles, set up your iPhone as a testing machine in xCode and make sure that this device is refered in a profile.
Then you switch you project in Unity to ios if you havent done it and setup the basic settings for the player.
Then you hit build and run with you iphone connected to your mac and thats basically it.
