Two 1024 or one 2048 texture?

I am quickly filling up my main game texture atlas on one 1024 by 1024. In your opinion should I resize all my UVs to match on a single texture 2048 by 2048 or just go ahead and have two textures?

Or another thought I had would be to make a 2048 x 1024 sized texture atlas. Would this work? Or would this hurt me in the end?

1x2048 is 4x1024. Up to you how you manage your ram.
