As the title imply.
When we add an Image to a Canvas, the 100X100 generated Square will appear grey instead of white.
However, Text Mesh Pro color will appear correctly white.
I believe it is just a color setup issue from Unity.

Along with that Fix, it would be great if we could have an HDR color picker instead of the current LDR one.
