I’m currently using 6000.0.37 and this also occurred on previous Unity 6 versions.
The font’s I have tested are: Bebas Neue, Nunito Sans & Montserrat all from Google Fonts.
Sometimes one will work and the other will break, after restarting the editor, different fonts would be broken. This is only happening in UI-Toolkit for me. I am using Static fonts not variable fonts btw.

Hi, AlexanderLott. Please report this bug via the Bug Reporter (“Help → Bug Reporter” in the Unity Editor). Make sure to attach the problematic project. A short video of you reproducing the issue would help tremendously. We’ll then look into it further and pass it to the developers in case it’s deemed a bug.
