Could anyone please confirm that these 2 (Unity 3.0 Beta 3 iPhone SDK 4 + latest XCode) play together nicely, before I install them both on my Mac?

They do.
Although I’ve found several bugs in Unity 3 beta so I would keep the old version, and I definitely wouldn’t use the beta for a production environment.
