My animations does not have models inside them (just animations with no visible rig in the FBXs), and when I tried dragging a model, which has the same rig, into the preview window, it doesn’t change anything. I tried using a prefab, the avatar itself, restarting unity, and the computer, but it still won’t let me preview the model.

I have encounter this before when I import a skeleton animation (without model) into Unity and try to use an existing model for preview.
Then I notice that I since the model I would like to use is set to Humanoid and I need to set my skeleton animation to Humanoid as well.
Try to set your Rig to Humanoid and see if this problem persist. Hope this helps.

Right click the animation clip, then select dependencies. Select your model, choose rig and animation type to Humanoid.
