That depends on your skills, and which model you’re talking about. “The” iPhone doesn’t exist; there are four different models + iPod touch models (plus iPad).

First of all, forget about polygons if you target iPhone4 at Retina resolution or iPad. Unless you do something stupid, your bottleneck will not be polygon count; it’s the pixel shader complexity that kills performance most often.
That said, the question is too broad to answer. The limits of what you can do in Unity depend on the hardware it runs. If you don’t do anything stupid, you will be able to push as many vertices and as many pixels as iPhone/iPad can do.
