Any ideas? I have messed with normals, they aren’t the problem, I have turned off lighting and post processing so it’s not lightmaps or lights/shadows.

Okay fixed that weird shading issue. I needed to remove the normals because of artefacting on IOS, but I didn’t remove them I just turned them down. Turns out that any UV’s that are upside down (not inverted) are still referencing the normal map somehow and messing up the shading.
