Unity is changing too fast for printed books to be relevant. Your best bets are online resources such as the Unity Manual (print it if you want a hardcopy) and sites such as:
Creating Game Art for 3D Engines is a little long in the tooth, but it’s devoted solely to modeling and texturing. It’s a great general resource for both, especially texturing.
Again Creating Game Art for 3D Engines above. There really aren’t any good Blender books (my opinion though). A lot of people swear by Blender 3D: Noob to Pro, which is a nice change from the usual swearing at that most Blender users experience at first. ![]()

Textures for Games course as well as a Unity course which includes
source code for all the Unity games. I took the texture course and
whilst it is Photoshop centric, the methods can be applied to any
2d program that is similar to Photoshop. The courses are taught
by veterans of the game industry and you have more than likely
seen their work in AAA games you have played. I gained a good
deal of knowledge from the texture course even though I was
already a Photoshop user.

Atmos, you might want to have a look at this forum thread. There are quite a few books on Unity including quite specialised topics like creating shaders. They are E-books - but I have installed a free Firefox plugin that will read E-books in the .epub format - a format that these books are available in.
As for age of information , this Ebook, for example, was published in Dec 2013:

This sale lasts until Jan 3rd 2014. Topics range from basic aspects of Unity to books devoted to creating shaders for Unity and scripting in C#
Once you have downloaded a particular topic, support files (scripts etc) are available for free download. And there are also a range of $5.00 videos ( ~ 2 hours) on a number of topics.

Be sure to take a look at the official Blender store… that book posted above seems quite interesting also. Just make sure to get something up to date as Unity and specially Blender change very fast. Unity is somewhat backward friendly, but Blender generally breaks everything every major release.
I like written stuff better than videos also… videos nowadays seems to be the rule, I like to learn at my own pace, I don’t have patience for videos, I find most of them too ‘slow’, perhaps because they are intended for a large audience, so we are limited by the lowest denominator, which I find quite retarded if you ask me. ![]()
