Modeling existed long before drawing tablets. You got it backwards cause modeling is done with mouse and keyboard most time. And in my experience its way easier. Tablets are for drawing. I use Blender for modeling and texture painting, Gimp for image manipulation, and Krita for painting. Why those and not Maya or 3DSMax or Mudbox or something? Because I intend to use my products commercially and I don’t have a spare $10k laying around to get all that software.

Whether it’s okay or not depends on what exactly it is you’re trying to achieve. If you’re merely using Unity for visualizing/showcasing some form of algorithm/behavior/model that can be used in other places, it’s okay.

As far as programming goes, game development has two aspects to it:
Engine and game logic. Unity only ships the former.

Trust me, this journey will not be practical. You can count on my experience. Once upon a time, I too thought of a God of war clone. I now know the complexity. So I urgently tell you to abstain. Form a team and specialize urself.
But… if your have enough time and money to survive 2-3 years, then why not. Start learning and deving now. You can learn a lot of thing.
Unity is a great engine. I have not researched other engine enough to tell you comparative qualitative answer.
