Reached out to the Asset Store prior to NoseKills’ answer and received a response today. Sharing what I’ve learned to confirm.

Top Paid: Most downloaded paid
Top Free: Most downloaded free
Top Grossing: Highest earning
Latest: New releases

Popularity: Number of views
Name, Price, Rating, or Release Date: As the category name implies

Typically “grossing” means “how much money it’s making” so a more expensive product with less downloads can make it higher on the list. “Top paid” typically means non-free products sorted by download count.
