My scene has been going over night (11pm) and still has about 4 hours left (currently 9am). Did I do something wrong or does everyone get times like this?
What’s your computer’s hardware specs? A machine with a high number of CPU cores and a fast SSD will bake considerably faster than your typical home computer from a few years back.

Shouldn’t be an issue i wouldn’t think.
3 hours, followed by me doing everything I could to make sure I’d never bake lights ever again.
usually around a minute tops with GPU PLM. If it takes longer I make it look worse, instead of waiting. But the quality typically is unchanged for that amount of time.

What is your PLM setting which has optimal quality and fast baking ?

This. Not every bake needs to be at final release quality. When you’ve finalised an area go ahead and do a nice long bake if it’s of value, but earlier on in development keep the settings as low and fast as you can.
99% of my bakes take less than a minute, I reduce everything to the very basic just so that I get a feel for the final design. I bake my scenes with full lighting once and they tend to go overnight (8-10 hours.)
I can not even bake a single room in our game with PLM GPU, which is sad. It would be nice to be able to test the lighting fast with GPU than do the full scene bake on CPU. Offcourse GPU support for large scenes would be ideal, but I don’t think we will see that anytime soon.
Edit: I have a script that bakes on our build agent, a full bake of all scenes (enlighten) takes about 12 hours on a 2700x ryzen
